Easy Banana Bread Muffins!

Kids and adults alike will love these easy to make Banana Bread Muffins.


Our Staten Island Bakery was not always the bakery storefront it is today in 2022. We started our small business in our home kitchen 5 years ago, where most of the time our 3 small children were under our feet while we baked! This is one our favorite Banana Bread recipes to make at home with the kids and is pretty much a staple in our house. It is quick, easy, and the kids love to help out. When making this easy Banana Bread, we like to use muffin tins, (more kid-friendly) but you can easily make this recipe in a loaf pan and cut into slices for serving! This recipe for Banana Bread is also super versatile! Feel free to add in walnuts instead of chocolate chips or both!


Ingredients

6 Tbsp. Unsalted Butter, softened

1/2 Cup of Sugar

2 Large Eggs

1 Tsp. Vanilla Extract

3 Very Ripe Bananas, mashed

1 1/2 Cups of Flour

2 Tsp. Baking Powder

1 Tsp. Cinnamon

1/2 Tsp. Salt

1/2 Cup Chocolate Chips (optional)

1/2 Cup Chopped Walnuts (optional)




First, preheat your oven to 350 degrees. Prepare either a 9x5 inch loaf pan or muffins tins. You can use cupcake liners or grease the pan itself, whichever you prefer :) Set aside.


In the bowl of an electric mixer, cream the softened butter and sugar. Let this go on a medium speed for about 5-8 minutes. The butter and sugar mixture should be a creamy pale-yellow color when finished. ( This really makes all the difference in creating a delicious Banana Bread! Be patient and let it go the full time!)


Then, while the mixer is on a low speed, add in your eggs and vanilla. Mix until smooth and combined well. (Tip: You may want to scrape down the sides and bottom of the bowl after this step.)

Add in your bananas while the mixer is on medium speed, you can either add them in mashed or whole. (I add them whole and let the mixer do the work!)

Next, in a separate bowl, combine the flour, baking powder, salt, and cinnamon. Stir with a fork or a whisk to combine all the ingredients.

With the mixer on low, slowly add in your dry ingredient mixture until fully combined. Turn the mixer off and scrape down the bowl again. Turn the mixer back on low and add in your chocolate chips and/or nuts until just combined.

DO NOT OVER MIX in this step. Pour batter into loaf pan or prepared muffin tin. If using muffin tins fill each cup 3/4 of the way.

For muffins, bake at 350 degrees for 15-18 minutes. They should turn slightly golden brown around the edges. If baking in a loaf pan, this is going to take a little bit longer, usually about 30-45 minutes. (TIP: You can always test for doneness using a toothpick, stick through the middle and if it comes out clean, they are done!) Let cool before slicing or removing from muffin tins.
